At Fermentis, the fresh yeast is dried, shaped in a condition that we know that after drying, you will be able to restart it very quickly because the yeast will be able to absorb sugars to convert into alcohol and start the fermentation.

How to use SafYeast? What is the impact of rehydration or direct pitch on yeast cell viability?
We tested with ale yeasts and lager yeasts the influence of temperature and agitation on viability [...]

*** CONCLUSIONS ***

There is no impact of rehydration on SafYeast cell viability! Except for agitation!
Agitation method has the highest impact in the rehydration process.
Temperature does not affect significantly at no or moderate agitation.
Type of media does not significantly influence viability.
No impact was observed with different periods of rehydration.
Conclusions are similar for the different Ales as well as for the different Lagers.

Direct pitch shows no impact on:
Fermentation kinetics
Ethanol production and attenuation
Volatile compounds
