Coffee Chocolate Mawa Cake
Ingredients
Dry mix
115g plain flour
85g sooji/semolina
2 tbsp instant coffee
75g walnuts almond
150g mawa/khoya , broken roughly
Wet mix
60 g ghee/clarified butter, melted, cooled
60g neutral oil
175g brown sugar
110g milk, tepid
60g cream, room temperature {20% fat}
1/2 tsp vanilla extract
100g thick yogurt, room temperature
1/2 tsp baking soda
Pinch salt
Simple coffee syrup
1/2 cup water
2 tbsp coffee powder
2 tbsp brown sugar
Filling
185g fresh cream {20% fat}
100g dark chocolate
Zest of 1 orange
Frosting
200g fresh cream {20% fat}
150g dark couverture chocolate
1 tbsp ghee
Chocolate shavings and pareils to garnish
I made this cake for my birthday which coincided with Diwali this year. You might remember the Saffron Pistachio Cake video I shared on Diwali, inspired by that, I made myself this delicious birthday cake and yes, it had to have coffee! I baked this cake on a whim because the recipe of the previous cake was in my head and the ingredients on hand. I was very unsure of the outcome because I was treading new ground.
