I love a good tomahawk steak & its been too long since I fired up the Kamado Joe Kettle Joe so I thought the perfect cook would be a bone in ribeye tomahawk steak... turns out this reverse seared tomahawk would be more difficult than I thought.

The reason this tomahawk proved more challenging is the conversion from indirect low and slow cooking, too hot and fast searing. The Kettle Joe comes with the SloRoller accessory, but no ceramic half moon heat deflectors, grill gripper, or ash tool... all of which I normally use when doing a reverse sear cook.
