Red Spinach Mango Avial Recipe:
Ingredients:
1 bunch red spinach leaves
1 raw mango, peeled and diced
1 cup grated coconut
2 green chilies
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chilly powder
2 garlic pods
4 shallots
1 tbsp coconut oil
Curry leaves
Salt to taste
Water as needed
Instructions:
Wash the red spinach leaves and chop them into small pieces. Cut the spinach stems into long pieces.
In a blender or food processor, combine the grated coconut, green chilies, cumin seeds, garlic, and shallots. Add a little water and grind to a smooth paste.
Heat a pan and add the spinach stems, raw mango, turmeric powder, red chili powder, salt, and water. Cook until the mango is tender.
Add the chopped red spinach leaves and cook until the leaves are wilted.
Add the ground coconut paste and stir well. Cook for a few minutes until the coconut paste is well incorporated and the flavors have melded together.
Add curry leaves and coconut oil into it
Serve hot with steamed rice.
