Eggs are almost synonymous with breakfast. We cook them in a variety of ways, but having them in a Strapatsada brings back vivid memories of a summer breakfast under the Greek sun. Such a delicious and easy to make recipe that often makes it even on our dinner table as a side dish. 🍳🤩

🧑‍🍳 Ingredients
🔸5 medium tomatoes (in small pieces or grated)
🔸3 medium eggs
🔸80g feta cheese
🔸3 tbsp olive oil
🔸½ tsp salt
🔸¼ tsp pepper
🔸1 tsp oregano
🔸1 tsp sugar
1️⃣ Grate the tomatoes using the large bladed side of a grater.
2️⃣ Simmer them in a pan for approximately 10 minutes or until their juices are evaporated.
3️⃣ Add the olive oil, salt, pepper and the sugar and stir until combined.
4️⃣ Whisk the eggs, add them to the pan and stir occasionally until they are cooked (approx. 2-3 mins).
5️⃣ Turn off the heat and mix the grated feta and oregano with the eggs and serve.
