I live in a small town where tofu is hard to come by. Moreover, I was struggling to find soy beans to even try and make my own from soy milk...when I thought "Well what about using box soy milk?". The internet is amazing. I tried a recipe with lemon juice a couple of times and seem to have it sussed out now - 2L of Box Soy Milk (unsweetened) - and 1 lemon per litre - are all the ingredients you need. Then you need a decent sized pot (to fit 2 litres of milk), a colander and a clean dish towel. My top tip is don't use a whisk - use a wooden spoon and do as little agitating as possible once you've added the lemon - as it allows bigger clumps of curds to form. I haven't tried flavouring it but lots of people have chucked in chives, garlic, liquid smoke and other stuff :) Let me know what you try and how it works out in the comments below.
Next up...I have got my hands on 100Kgs of Soy Beans arriving next week - and will be attempting to make soy milk at home with an instant soup maker machine my brother bought for my Mom a few years ago. I really hope it works...otherwise...I have a lot of soy beans.
