Mung bean soup is known for its cooling and detoxifying properties. Mung beans are popular in China, India, Indonesia, Korea, the Middle East and Thailand. You only need 3 ingredients to make this easy detoxifying soup!
INGREDIENTS:
¾ cup (150 grams) mung beans, rinsed and drained
7 cups (1.65 liters) water
Optional: Honey, coconut sugar or rock sugar to taste
INSTRUCTIONS:
1.) Place the mung beans in a bowl and cover with water. Let the mung beans soak overnight or for at least two hours.
2.) After the mung beans have soaked, drain them in a strainer and rinse. Place the mung beans in a soup pot. Add the 7 cups (1.65 liters) of water. Bring to a boil.
3.) Reduce the heat to simmer on medium low, lightly covered. Cook for 45 minutes, or until the mung beans are soft. Depending how thick you want the consistency, the soup can be cooked longer to make it a little thicker. Or if you want to thin the consistency add a little more water.
4.) If adding sweetener, add the optional sweetener to taste. Cook a few more minutes. The soup can be served warm or chilled.
NOTE: To make a savory version of this soup, add 1 to 2 cups of chopped vegetables at the boiling stage. Add any dried herbs of your choice. Instead of adding optional sweetener at the end, season with sea salt and white pepper to taste.
