Ingredients:
- 8 eggs
- 20 oz Simply Potatoes O'Brien Hash Browns
- 1 lb jalapeno poppers- about 8 each
- 1/4 Cup heavy cream
- 1 tsp salt
- ½ tsp pepper
- 1 Cup shredded Colby Jack cheese
Recipe:
- Preheat oven to 350°F
- Cook hash browns according to package directions
- Cook Jalapeno poppers according to package directions
- Meanwhile, in a medium bowl, whisk the eggs, heavy cream, salt and pepper. Set aside for now
- When then poppers are cooked cut them into thirds.
- Spray an 8x8 baking dish with non stick spray
- Spread the cooked hashbrowns into an even layer on the bottom of the pan. - Pour the egg mixture over the top. Place the cut jalapeno poppers on top in an even layer.
- Top with shredded cheese and place in preheated oven. Bake for 25- 30 minutes or until the eggs in the center are cooked through.
