Back in the Philippines, we used to add lemongrass to our soups for that extra touch of comfort. While I couldn't find fresh lemongrass, I discovered a delightful substitute from my thriving lemon balm plant in the garden. By infusing lemon balm tea into the rice, I achieved a refreshing and comforting twist. This recipe is incredibly easy, quick, and adaptable. With just day-old rice, ginger, seasonings, lemon balm tea, and your choice of vegetables, you can customize it to your liking. I found this Congee to be a wonderful remedy, easing my hyperacidity, soothing my sore throat, and even made me feel a little less homesick. Ingredients:
1 1/2 cup cooked rice
Lemon balm leaves soaked in 500ml hot water
1 small carrot, chopped
1 sprig spring onion, chopped
1/2 cup frozen mixed vegetables with corn, green peas, chopped bell peppers, and sliced green beans
Mung beans sprouts (as desired, optional)
1-2 Tablespoons garlic and ginger paste (or you can also use 2 fresh garlic cloves, grated and 1 piece thumb-size fresh ginger, grated)
1 Tablespoon soy sauce
1 teaspoon salt
2 teaspoon Balsamic vinegar or a squeeze of lemon (optional)
