A San Francisco native, Nicolas has been bartending in San Francisco for over 10 years and has extensive experience working in dive bars to craft cocktail venues and fine dining establishments.

➡️ His menu highlights both wild and farmed local produce alongside rare, unique, and small-batch spirits. In addition to his bartending and R&D roles at Lazy Bear, he is an accomplished artist and woodworker, bar consultant, and is the owner of bar True Laurel in the Mission District of San Francisco.
