How to make a perfect chaler payesh - Creamy rice kheer - Indian rice pudding
Today I will be sharing the secrets to a perfect rice kheer also known as Chaler Payesh in Bengal which is a region in the eastern part of India. Chal in Bengali means rice and Payesh is the pudding that is made by reducing milk. It's a very popular Bengali dessert at the same time it is popular all over India and is known as chawal (rice) kheer in other parts of India. Rice Kheer or chaler payesh is served during birthdays, festivals or any special occasion.

1.The INGREDIENTS required for this Bengali rice pudding are:
2.short grained rice/gobindobhog/kalijeera- 2 level tablespoons
3.Milk (whole milk makes the Payesh have that richer flavor )- 1 litre
4.golden raisins - 1 tablespoon
5.sugar- 6 tablespoons.Taste your Payesh and if you feel you need more then add more sugar according to your taste.
6.salt (optional)- Just a TINY pinch .Addition of a tiny pinch of salt actually helps to magnify flavors by subtly enhancing the natural taste of the ingredients. That's why most baking recipes always call for a pinch of salt.
7.cardamom powder/elaichii powder- 1/4th teaspoon
8.bayleaf- 2 small or 1 large
METHOD
1. wash and soak rice in water for 30 minutes before starting the recipe
2. soak raisins in water for 30 minutes
3. Add milk to a heavy bottomed pan
4. when it nearly comes to boil add bayleaves
5. drain water from rice and add to milk
6.when milk comes to boil, lower heat and keep stirring.
7. after 12-15 minutes check on rice
8. if rice is soft then only add sugar
9. drain water from the raisins and add it AFTER ADDING THE SUGAR, add pinch of salt, and cardamom powder
10. keep stirring on low heat
11. after 35-40 minutes milk should be reduced, and if it coats your spoon then it has reached desired consistency.
12. don't make it too thick as it will thicken further as it cools down. Serve it warm or chilled.
