Chef Aunty Dale Chapman is a Yuwaalaraay Kooma woman, born in Dirranbandi in southwest Queensland. With a love for flavour and cooking growing up inspired by her Mum, Dale decided to follow her dream, starting her official career as a teenager apprentice in Brisbane before continuing her training in France.

But Dale found herself continually asking one question - how do I marry my culture and my contemporary training as a chef? How do I bring those two things together?

Returning to Gubbi Gubbi country (Sunshine Coast) Dale found her answer in My Dilly Bag during 2000, striking out on her own after 20 years working in restaurants and culinary institutes. My Dilly Bag is a culmination of Dale's dreams and life missions, allowing her to work sustainably with Indigenous communities, create income streams for Indigenous creators, and increase cultural awareness.

Through My Dilly Bag, Dale works with producers to sell a range of native ingredients, as well as offer workshops and cooking classes to teach the wider population how to use those ingredients in their day to day cooking.
