Quick and easy Tzatziki sauce, simply fresh and delicious. Perfect for pita, souvlaki, donair, rice, or a side dip for vegetables. I used:
1/3 of a Long English Cucumber
2 Cloves of Garlic
5 Tbsp of thick full fat Yogurt
2 Tbsp dried dill
1 Tbsp dried parsley
salt and pepper
a dash of greek seasoning if you want
Grate the cucumber and set aside to drain the juice out. I ended up putting it in a strainer then squeezing it with my hands. I'm a hands on cook and it's fun to feel the food =)
Grate the garlic too
Put the thick full fat yogurt in a bowl.
You can get all fancy and use a thick greek youghert and strain it in cheese cloth to make it less moist BUT I don't do that =)
add the garlic, cucumber and seasonings.
Gently mix until blended. and.... that's it!!
This can be used right away but it tastes better when it has a chance to sit for a bit. It will keep for a few days in the fridge but I don't know how long it will last.
