In the video, Joanne discusses how taking copper as a cofactor for the DAO enzyme in histamine intolerance is often NOT a good idea, especially in women.
Copper is a cofactor for the DAO enzyme, however for those with inflammation (histamine is a sign of inflammation) and high oestrogen, copper might already be too high.
Having high copper is a problem as copper and zinc compete for absorption in the body. If your copper is too high you can't absorb your zinc.
Without zinc, you will have issues making hydrochloric acid. Low hydrochloric acid can cause SIBO which is a major cause of high histamine in the first place. You also can't heal your gut without zinc!!
