This was one of my struggle meals growing up. Chicharron is salty, crunchy, and fatty and pairs so well with the acidity from lime and the sweetness from a tomato salsa. Personally, I’m not a fan of the bagged chicharron found in some supermarkets. I prefer to have them fresh. But where can you get them? If you’re in California, you can check out your local Vallarta or Northgate Mexican grocery stores. To level up, you can check out your local Mexican mom & pop market if there’s any. - 3 tomatoes, roasted (remove black skins before blending)
- ½ white onion
- 1 serrano pepper (remove black skins before blending)
