One sauce to rule them all! The amazing chimichurri. It's been my go to for steaks BUT it's also delicious on other proteins. By adding a few other ingredients, we can make this sauce shine on salmon and on chicken.

Base chimichurri recipe:

- 1/4 cup chopped cilantro
- 1/4 cup chopped parsley
- 3-4 cloves minced or grated garlic
- 1/2 tbsp kosher salt
- 1/2 tbsp crushed red pepper
- 1/2 tbsp dried oregano
- 1/4 cup red wine vinegar
- 3/4 cup olive oil

You can also adjust these to your liking and preference. Want it more garlicky? Add more garlic. The best part of chimichurri is that you can really make it your own.

For the chicken, start with the base mix above and add the following:

- 1/2 diced shallot
- 2-3 tbsp roasted red peppers
- 2 tbsp honey

I found out that this combination is absolutely amazing on chicken. Sweet, savory and so good!

And finally for salmon, we're going with citrus! To the base chimi recipe, add the following:

- zest from 1 lime
- juice from 1 lime
- zest from 1 lemon
- juice from 1 lemon
- zest from 1/2 orange
- juice from 1/2 orange

The fresh citrus juice and zest is perfect for salmon and fish.
