Reshmi Kebab Karahi:
Ingredients for kabab
Mince chicken 400 gm
Ginger garlic 1 tbsp
Onion 1 chopped
Cashew nut grinded 2 tbsp
Salt 1 tsp
White pepper ½ tsp
Black pepper ½ tsp
Green chili grinded 1 tsp
Roasted & crushed cumin 1 tsp
Coriander crushed 1 tsp
Coriander chopped 2 tbsp
Corn flour 1 tbsp heaped
Allspice 1 tsp
Bread soaked in milk 1 slice large
Ingredients for masala
Tomatoes 4 chopperized
Onion 1 cup chopped
Ginger garlic 1 tsp heaped
Green chilies 2 chopped
Ginger julienne 2 tbsp
Salt 1 tsp
Chili powder 1 tsp
Oil ¼ cup
Coriander leaves 2 tbsp
Allspice ½ tsp
orange color pinch
Method for kebab
Marinate mince with all the given ingredients and chopperize well, grease hands, make longish kebabs, pan fry, give dum of coal.
Method for masala Heat oil, add chopped onion, fry till light golden, add ginger garlic paste, salt, chili powder and chopperized tomatoes, fry well, add fried kebabs with chopped greens and ginger julienne, leave on dum for 10 mins. Lastly add allspice, serve with nan.
Chana boti masala:
Ingredients
Boneless mutton ½ kg
Coriander leaves ½ bunches
Ginger chopped finely 1 tbsp
Allspice 1 tsp
Turmeric ½ tsp
Garlic chopped 2 tbsp
Small green chilies 8 finely
Salt 1 tsp leveled
Chili powder 1 tsp
Bay leaf 1
Onion sliced 3
Oil ¼ cup
Method
In a pressure cooker add oil with bay leaf and sliced onion, fry stirring till light golden, add chopped ginger garlic, green chilies chopped till they become soft, keep stirring in between, fry till onions light golden, add finely chopped mutton with turmeric, chili powder, allspice, salt, add 1 cup water and pressure cook for 20 mins, then open and fry till water dries, add chopped coriander leaves, green chilies, serve hot with lemon wedges and parathas.
Mocca Mousse Jars:
Ingredients
Melted dark chocolate 1 cup
Sponge cake 1
Ingredients for coffee syrup
Water ¾ cup
Coffee 1 tbsp
sugar 4 tbsp
Ingredients for mocca mousse
Dark chocolate chopped ½ cup
Cream ¼ cup
Coffee 1 tsp
whipped cream 1 ½ cup
Grated chocolate as required
Method
Spread jars with melted chocolate, cut round slices from the prepared sponge size of your jar, put in the jar, soak cake slices with coffee syrup, melt ¼ cup cream with chocolate and coffee, fold in whipped cream, fill in jars, decorate with grated chocolate or chocolate decoration.
