Pan Fried Chicken Breast
2 chicken breasts
Salt & Pepper
Olive oil
1 tablespoon butter
Optional - smashed, peeled garlic cloves and Rosemary or thyme
Place the chicken breasts on a plate and season generously with salt and pepper. Flip with some tongs and repeat.
Lightly coat a pan with some olive oil. Swirl to coat the whole pan. Heat.
Place the chicken breast in the hot skillet (it should sizzle). Reduce the heat to medium/high.
Cook for 5 to 6 minutes, undisturbed. Flip the chicken breast — make sure it releases easily. If it still stuck to the pan, it is not ready. Do not tear it off.
Add the butter to the sides of the chicken breasts. If using, scatter the garlic cloves and the Rosemary on the sides.
Swirl the pan so that the butter spreads on the bottom. Using a spoon, add some of the melted butter onto the chicken. Cook for another 6 to 7 minutes. Flip once and finish cooking.
If you have a meat thermometer use it. The chicken should register 165°F (74°C).
Remove the chicken from the pan and place it on a board. Allow it to rest for 5 minutes and slice it against the grain. Serve and enjoy.
