This is one of the most incredible, healthy, Italian potato salads to make with amazing flavour. The simplicity of the mayonnaise dressing makes it light and fresh, and perfect for summer.
The only cooking involved is the baby potatoes, cooking them until they are just tender, (usually 8-12 minutes depending on the size). Any longer and when you go to mix them they will start to fall apart.
In case you're wondering Insalata di Patate literally translates to 'salad of potato'. This cold salad is perfect for barbeques, picnics and as an accompaniment to any meat, fish or salad throughout the year.
If you make a big batch it will last a few days in the fridge where it actually tastes better a day or two afterwards.
