This pie is crunchy, fluffy, cheesy and everything you'd want in a cheese pie.
Loved all over Macedonia and the Balkans, Gibanica is eaten for breakfast, lunch and dinner.
Years ago the pastry (or Kora) was hand made. Today, thanks to store bought filo, you can make this in a snap at home!

YOU NEED:
14 sheets of package Filo dough (I used 2 packages of 7)
500 g crumbled Feta or Cottage Cheese
200*300 g of Kaymak or Cream Cheese
4-5 eggs
1 cup sparkling water (or plain with two teaspoons of baking powder)
Pinch of Baking Powder
1/4 cup of Yoghurt, Milk or Kefir (optional)
1/2 cup vegetable oil
1 tsp salt
(Oil for greasing tray and sprinkling)
