Now when you're sweetening berries for something like a shortcake you want to make sure that you don't add too much sugar. In the middle of strawberry season strawberries have a natural sweetness that, if you add any sugar, it's going to make it too sweet. So the first thing to do, is really important, is make sure you taste your berries and then add sugar if you need to. But remember, as soon as you add that sugar, it's going to start to break down the strawberry because it's going to draw out the water and the moisture. So I don't usually do it more than an hour ahead. And also, if they need more help after that, you can add a pinch of salt and a little bit of lemon juice and that helps bring out their berry flavor even more.
