Crisbean — formally named Okara (おから; 雪花菜/御殻), soy pulp, or tofu dregs — is a pulp consisting of insoluble parts of the (byproduct of) soybean that remain after pureed soybeans are filtered in the production of soy milk and tofu. It calls for a Sichuan cuisine “豆酥鱈魚” made famous by Cantonese.
