A boss that hits hard and gets hit hard, paired with attack patterns that aren't too troublesome to learn nor restrictive toward your movement - this shouldn't give you many problems after your first couple of bouts.
The Hydro Hypostasis has the same immunity to freezes as all other bosses. Even with its constant Hydro infusion, you can trigger freezes on it all you want, but you won't immobilize it doing that. Freezes come in handy for its minions, however.
The Hypostasis is capable of summoning two Water Droplets for assistance: one light blue, one dark blue. The light blue Droplet's sole purpose is to send slow-moving orbs toward the Hypostasis, healing anyone the orb hits for a moderate amount; this includes you, so it's in your best interest to intercept the orbs so the Hypostasis doesn't get them. The dark blue Droplet's chases you and self-destructs in a Hydro explosion (regardless if it does so on its own or you kill it first), so run away from this. Elemental reactions can destroy the Droplets - several elements are effective, but Cryo seems to be the most potent (Kaeya's elemental skill can destroy a Droplet in one hit). That said, you don't even need to destroy the dark blue Droplet, as it'll do that job for you.
The Hypostasis itself may opt to become a tornado and send water raining down to three locations, often trying to lead these zones based on your movement. Avoid the persisting rain as you set up for your own attack.
The Hypostasis can also send out its cubes to come rolling in towards the Hypostasis, before ending in a large Hydro explosion around the Hypostasis. Quickly turn around and run between a gap in the cube waves, and stay far enough away to avoid the explosion.
The Hypostasis may attack you more directly by turning into a fish tail and slamming down, sending water geysers in your direction. React quickly with two sideways dodges to avoid harm.
The Hypostasis can opt to drop its barrier and set up a Hydro field, letting Hydro dolphins jump up and down in place for several seconds. You'll have to pay close attention to the ground in order to distinguish the dolphins' warning ripples amidst the Hydro field the Hypostasis has laid out; remember where each dolphin appeared, as they come back down in the same spot and are still harmful doing this. While this attack can have you on the move for a while and can rack up damage quickly if you make mistakes, it also leaves the Hypostasis wide open for several seconds, and many elemental bursts can get their full damage off. Take full advantage of this attacking opportunity; use Crystallize for Hydro shields to prevent disruptions.
If the Hypostasis sends its cubes spinning into the air and then has them submerge into the ground, bubbles will start appearing around the arena. These accompany the Hypostasis' other moves, and will persist for a considerable length of time unless the Hypostasis is pushed into its revival move - stay wary of these bubbles while you perform other evasion.
When pushed to low health, the Hypostasis sends out three Water Droplets that try to reach the Hypostasis as a source of healing. Physical attacks don't do anything to these, so stick to elemental reactions (especially Cryo). If the Hypostasis does revive, any Droplets destroyed will remain so the next time the Hypostasis tries to revive.
The combination of the Hypostasis' Hydro infusion and the fact that some of the Hypostasis' attacks don't heavily limit your mobility gives you several chances to set up attacks in advance. I make use of this with Guoba from Xiangling and Lisa's elemental skill bolts - with that setup, I can focus on melee attacks instead of using up time on those skills. Kaeya excels at destroying the Water Droplets, and Noelle provides light healing as well as safety during the dolphin attack.
