Ravioli is one of my favorite pastas. This one is so flavorful with a delicious pink sauce with fresh basil and spinach!
Ingredients:
Frozen ravioli
spinach
basil
canned whole tomatoes
canned tomato sauce
salt/black pepper/oregano
minced garlic (about a tbs)
heavy cream
onion
bell peppers
olive oil
fresh cherry tomatoes
Cut tomatoes in half
chopped bell peppers and onion
Add olive oil to pan and heat
add in peppers and onion and cook until soft
add one can of whole tomatoes and 1/2 can of tomato sauce
add in seasonings to taste (about 1 tbs of oregano)
Cook tomatoes for about 15 - 20 minutes
Turn heat off and stir in heavy cream
add cooked pasta and toss in the sauce. This recipe is definitely a keeper!
