OLD SCHOOL SMOTHERED OXTAILS:
This is another recipe for oxtails
A new spice and seasoning that i am using that a fellow old school soul food family member sent me
Its also cooked in an instant pot until its actually falling off the bone tender
The is juicy tender and flavorful that it actually melts in your mouth with a taste of a nice roast beef

RECIPE:
5# oxtails
1 quart beef stock
Oxtails seasoning to taste

Season oxtails very well with oxtail spice and seasoning
Dust with flour and sear brown off in pot
Add tails back to pot and add stock and cook for 90 minutes on meat setting
If oxtail sauce is too thin add a bit of roux to the stock to thicken

Serve with rice and mashed potatoes
OLD SCHOOL LEMON ROASTED CHICKEN AND POTATOES

This is a dish i created from a few items that i received from my recent imperfect foods box
Its actually very simple and easy
Everything is done in one cooking dish

RECIPE:
1 small whole chicken (split in half)
2# Yukon gold potatoes( cut on the bias) wedges
2 whole lemons(sliced or quartered)
1/2 cup lemon pepper
1 quart chicken stock
salt and pepper to taste
olive oil

DIRECTIONS:
Rub chicken and potatoes with olive oil or vegetable oil
season with lemon pepper and salt and pepper

Place potatoes in deep casserole dish
Leave hole in middle on dish to place chicken
Place chicken in dish with potatoes
pour stock in dish and add sliced butter on top of chicken and potatoes
Place in 375-400 degrees uncovered for 45 minutes to 60 minutes
ENJOY!!!!!!!
