Today on Booze On The Rocks, we make a WATERMELON MOJITO. This variation of the original Mojito is sweets and tart and incredibly refreshing. The watermelon and lime juice are balanced together with the simple syrup, and the rum gives it that little kick you want. It's perfect for hot weather on the back deck or a Caribbean beach. WATERMELON MOJITO

2 oz/60 ml White Rum
2 oz/60 ml Watermelon
6-8 Mint Leaves
.75 oz/22.5 ml Lime Juice
.5 oz/15 ml Simple Syrup ***
2 oz/60 ml Soda Water

Method

1. Add the watermelon and mint leaves to the glass.
2. Muddle them gently.
3. Add the lime juice, simple syrup, and white rum to the glass.
4. Add some crushed ice.
5. Mix thoroughly.
6. Top with soda water.
7 Garnish with a mint sprig and watermelon slice.

*** SIMPLE SYRUP

8 oz/240 g Sugar
8 oz/240 ml Water

Method

1. Combine the sugar and water in a medium sauce pan on the stove.
2. Gradually heat until the sugar is full dissolved into the water.
3. Allow to cool and then add to a clean bottle.
4. Store in the refrigerator for use.
