For the buns
600g Bread flour
11g dried yeast
50g sugar
7g salt
3g baking powder
3g bicarbonate soda
300ml water
13g milk powder
60g pork or duck fat
For the duck legs
2 Creedy Carver duck legs
Salt
Chinese five spice
Cinnamon stick
Garlic
Star anise.
