RECIPES:
Blueberry scones
Ingredients
Blueberries
2 cups of flour
3 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup ( 115g ) cold butter
1/2 cup ( 120 ml ) milk
1 egg
- Mix all dry ingredients in a bowl
- Add the butter and combine well
- In a separate bowl, mix eggs and milk , froth the mixture
- Combine dry and wet ingredients, mix well
- Add the blueberries
- Knead by hand in a well floured surface
- Using a cookie cutter, cut the dough
- Brush them with milk mixture or egg yolk
- Bake the scones for 18- 20 minutes ( 200° )
- Enjoy
Chicken Pho
1 chicken carcass
1 onion, roasted
1 ginger, roasted
2 litres water
2 tbsp fish sauce
1 tbsp sugar
1 tbsp chicken bouillon
Pho noodles
onions
cilantro
scallion
Pho Spices:
2 star anise
1 or 2 cinnamon stick
cardamom
1/4 tsp cloves
2 tsp fennel seeds
2 tsp coriander seeds
( remember to toast everything on a dry skillet )
- Shred off all the chicken meat from your carcass and set aside
- In a large pot, add all the ingredients, chicken carcass, toasted onion and garlic, fish sauce, sugar, and chicken bouillon
- Bring this to a boil
- Once boiling, reduce heat and simmer for 1 hour
- Once broth is done,
- Clean the broth, season with salt and adjust the seasoning to your preferred taste .
- Assemble your bowl with pho noodles, shredded chicken, thinly cut onions, cilantro, scallion and any additional garnishes.
- Enjoy!
