Today we are sharing with you the recipe of Mexican Hot Pot Rice

Salt : Tata Salt @tatasalt

Ingredients:
1 Cup - Soaked rice (30mins - Soaked)
1 Cup - Finely Chopped Onions
3/4th Cup - Tomato Puree
1 Cup - Red, Green and Yello Capsicum
2 Tbsp - Butter
1 Tsp - Garlic Paste
2 - Finely Chopped Green Chillies
1 Tsp - Cumin Powder
1 Tsp - Chilli Flakes
1 Tsp - Oregano
2 tbsp - Red chilli powder
1 Tsp - Black Pepper Powder
2 Tbsp - Tomato Sauce
1/3rd Cup - Cooked Rajma
1/3rd Cup - Spring Onions
1/3rd Cup - Cooked Corn
1 - Jalapeno
Salt to taste
Process:
Take a Heavy Bottom Vessel to this add butter followed by garlic paste. Let it simmer for 10 seconds and immediately add green chillies and onions. Otherwise the garlic will get burnt so don't wait and immediately add the chillies and onions.
Saute it for a minute and then add pre soaked Rice and salt to taste and saute it for a minute. It will help to enhance the flavour. After that add Cumin Powder, red chilli powder Chilli Flakes, Oregano and Black Pepper Powder.
Then add 2 Cups of Water and cover it and let it simmer for around 2 - 3 minutes.
After that add Tomato Puree, Capsicums, Corn, Rajma, Spring Onions, Jalapeno, Tomato Sauce. And Cover it and cook it for 6 - 7 minutes or untill it is cooked and cover it with lid. You can check in between and if required and can add water if required.
And Yay it is ready to serve
add some cheese and spring onions and serve it with nachos.
