This might be my new favorite. First time making bacon jam and I’m hooked.⠀

Cut up 1 pound of bacon into 1/2” wide strips and drop them in a cold skillet. Cook over medium heat until most of the fat is rendered out and remove the bacon when it’s still chewy. Drain about ½ the fat and add in 2 large diced sweet onions. Cook until they soften up and add ½ cup brown sugar and an ounce or 2 of whiskey.⠀

Continue cooking over low heat until everything starts to thicken up, then add the bacon and a few dashes of balsamic vinegar. Continue cooking over low heat until nice and jammy.⠀

And this stuff is amazing! Sweet, savory, bacony, so delicious!
