Hi Neighbours,
in this video we made the most light and flaky crispy battered fish. After 7 yrs of working in a fish n chip shop I picked up a few things on how to make wonderful fish n chips.

The batter
1 cup of all purpose flour
1/2 cup cornstarch
1/2 tsp of chili powder
1 tsp paprika
1/4 tsp of black pepper
1 tsp of garlic power
salt to taste
1/4 tsp of baking soda
1 tsp baking powder
add cold water to make like a thick pancake batter with a table spoon of vinegar
cup of flour mix with some cornstarch like 1/4 cup for dredging fish
dredge fish in flour mixture
then batter the fish with the batter mixture
then back in flour mixture
fry fish until done 145 F is cooked
