Lemon Herb Chicken with asparagus and roasted potatoes. This easy recipe is packed with lots of flavor. It's healthy and incredibly delicious. I hope you enjoy it!

✦INGREDIENTS:
• MARINADE
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 lemon (squeezed)
- 3 tsp minced garlic
- salt/pepper (1 tsp)
- 2 tsp thyme
- 1 tsp rosemary
- 2 tsp oregano
- 2 tsp parsley
*marinade for 1 hour
- 2 tbsp olive oil
- 1 tbsp butter
- thinly cut chicken breasts
*pour the rest of marinade in pan

• ROASTED POTATOES
- potato medley (quartered)
- 2 tbsp
- salt/pepper (1/2 or 1 tsp)
- 1 tsp garlic powder
- 1 tsp thyme
- 1 tsp rosemary
- toss then bake at 400 degrees for 15 min.
*top with parsley

• VEGGIES
- 3 tbsp butter
- 1 -2 tbsp olive oil
- 1 red bell pepper cut into chunks
- asparagus (cut into thirds)
- salt/pepper to taste
- 1/2 tsp rosemary
- 1/2 tsp thyme
- 2 tsp minced garlic
- 1/2 lemon (squeezed)
