I had to experiment a lot before I discovered a combination of ingredients that bring the true flavor of authentic Knefeh.
I found that Ricotta and Fresh Mozerella worked very well together as a substitute for the Akkawi or Nabulsi cheese since they are not easy to find. I also realized that adding salt to the dough contrasts the sweetness of the syrup and brings a good balance to the flavors.
Ingredients Recipe serving size: 4
Round pan size: 9 in. x 1.5 in.
A. THE KNEFEH CRUST
1/2 cup flour
1 cup semolina
1/4 cup ghee
2 Tablespoons sugar syrup
1 Tablespoon baking powder
1 teaspoon yeast
1/4 teaspoon salt
1/4 cup and 2 Tablespoons warm water
B. KNEFEH CHEESE TOPPING
16 oz Fresh Mozzarella cheese
& 2 Tablespoons Ricotta cheese (Add 2 more spoons for a richer flavor)
