Japanese fried rice or Yakimeshi is very similar to Chinese fried rice with the exception that short grained noodles are used. It is made made with ingredients such as eggs, vegetables, garlic, salt, pepper, and often a protein of some sort such as shrimp. The most unique thing about the dish is the addition of mayo. It might sound strange to add mayo to rice, but it makes it so smooth, silky, and creamy, not to mention incredibly delicious.

The wonderful thing about the dish is that it is fast and easy and can be made start to finish, with the exception of the cooking the rice, in about 20 minutes to half an hour. It can be served on its own or as a side dish.

As a result of our Japanese fried rice containing very few ingredients, it can be made very quickly. I don't use vegetables in the dish dish just rice, egg, garlic, soy sauce, pepper, and green onions (which could be considered the one and only vegetable I guess).

I, more often than not, serve mine up with chicken. I have been know to serve it up with pork or beef too.

Ingredients:

2 cups of short grained pre-cooked rice
1/4 or 4 tbsp of mayo
6 large cloves of chopped garlic
2 tbsp of unsalted butter
1 beaten egg
3 green onions, chopped
1 tbsp of soy sauce

Method:

Add the rice and mayo to a bowl and mix until well well combined. Set it aside.
Place the butter in a pan over medium heat and let it melt down. Place in the chopped garlic and saute until soft and fragrant. Do not burn the garlic.
Add the rice back in and stir and cook until it is heated through.
Move the rice to one side of the pan and place the egg in. Let it set and scramble it. Mix the egg with the rice.
Put the green onions and soy sauce in. Stir it once more until well incorporated.
Turn off the heat, serve, and enjoy your Japanese style fried rice.
