Ingredients :-
1. All purpose Flour 2 Cups
2. Refined oil 2 Tbsp.
3. Baking Soda 1/4 Tsp.
4. Sugar 1 Tspn.
5. Salt 1/2 Tspn
6. Boiled Potatoes 2 Nos.
7. Coriander powder 1 Tspn.
8. Garam Masala 3/4 Tspn
9. Cumin Powder 1/4 Tspn.
10. Anardana Powder 1/4 Tspn.
11. Salt as per taste
12. Chopped Corriander leaves
13. Chopped Green chillies
14. Red Chilli Powder 1/4 Tspn.
15. Crushed corriander seeds, coriander leaves and Nigella Seeds (Kolonji)
16. Butter and red chilli powder for decoration.
Recipe :-
PREPARING DOUGH
1. Add two tablespoon refined oil to 2 cups of all purpose flour and mix.
2. Now add 1/4 Tspn Baking soda, 1tspn sugar and 1/2 Tspn Salt to the flour and make sticky dough by adding water. The consistency of the dough should be on Soft / sticky side and once the dough is made, let it rest for 20 minutes.
PREPARING STUFFING
3. Meanwhile, to make stuffing mash two boiled potatoes and add 1tspn Coriander Powder, 1/4 Tspn. of red chilli powder, 3/4 Tspn of Garam Masala, 1/4 Tspn of Cumin Powder, 1/4 Tspn of Anardana Powder, salt as per taste, chooped corainder leaves and green chillies and mix it well.
MAKING KULCHAS
4. After 20 minutes, take the dough out of the setting bowl, apply some all purpose flour on a surface and knead the sticky dough with the all purpose flour to bring even and soft consistency to the dough.
5. Take a portion of the dough, flatten it with hands and apply one teaspoon desi ghee on top of it. Seal the dough and again flatten it.
6. Now put the stuffing onto the flattened dough and again seal it.
7. Flatten the dough ball with fingers, apply some water with the help of finger tips onto the kulcha and put it on iron tawa with the watery side on the tawa so that the kulcha can stick.
8 Apply crushed corriander seads , kalonji and coriander leaves onto the bread
9. Turn the tawa upside down and cook the kulcha directly onto the flame.
10. Once Kulchas are ready apply red chilli powder and butter on top of it and serve hot.
TIPS:-
1. Use Iron Tawa for making kulchas. Do not use
2. While cooking the kulchas upside down, cook the corners of the kulcha first.
3. Apply red chilly powder with butter to get the beautiful color and taste.
