The quest for clever, flavorful ways to use Red Chile Adobo brought me to a Spanish restaurant. Well, sort of. I know this beautifully complex red adobo is amazing on any and all roasted root vegetables, and that's when it hit me: patatas bravas, that ubiquitous tapas dish found in Spanish restaurants the world over, would be the perfect template for Mexican flavors. Add a few dollops of garlicky mayo and a few generous dashes of Mexican hot sauce, this is my new favorite dish to pass.
