Smashed Potatoes
Ingredients
2 lbs baby potatoes
2 Tbsp melted butter
salt & pepper
smoked paprika
garlic powder
chives to garnish
Ranch dressing
1/2 cup sour cream
1/2 cup mayo
1/2 cup buttermilk
2 Tbsp chopped parsley
2 Tbsp chopped dill
2 Tbsp chopped chives
2 canned chipotle peppers, chopped
1 tsp lemon zest
salt and pepper
Preheat oven to 425f
Boil your potatoes until fork tender, about 10-15 minutes. Remove and place on a baking sheet. Smash potatoes using the bottom of a glass. Brush with melted butter and season with salt, pepper, paprika and garlic powder. Roast in the oven until golden brown, about 20-25 minutes.
In a bowl, mix mayo, sour cream, buttermilk, parsley, dill, chives, chipotle pepper, lemon zest, salt and pepper. Mix well and set aside.
To a plate, add some of your smashed potatoes and a ramekin of your ranch. Garnish with chives and enjoy!
