Hi everyone. Today, we are making Veg. Malabari Curry- It is healthy and tasty South Indian curry that can be served with rice or paratha. It is naturally fortified with paneer and curry leaves powder. It is rich in fiber, calcium, iron, magnesium, selenium, folates, biotin and Vitamin A.
नमस्ते। आज हम बना रहे हैं वेज मालाबारी करी- यह हेल्दी और टेस्टी साउथ इंडियन करी है जिसे चावल या पराठे के साथ परोसा जा सकता है. हमने पनीर और करी पत्ते के पाउडर के साथ इस करी को प्राकृतिक रूप से फोर्टिफाइ किया है| यह फाइबर, कैल्शियम, आयरन, मैग्नीशियम, सेलेनियम, फोलेट, बायोटिन और विटामिन ए से भरपूर है
Veg. Malabari Curry
Naturally fortified with paneer and curry leaves powder
Ingredients for the paste
1 dry red chili
1 medium pc of cinnamon
1 black cardamom
2 cloves
3-5 black peppers
2 green chilies
4-5 garlic cloves
Few curry leaves
1.5 tsp ginger paste
1 tsp turmeric powder
Salt to taste
¾ cup fresh coconut
Water as required
1. Blend everything with little water to get thick paste.
Ingredients for the curry
1+1/2 tbsp ghee /oil
1 big pinch of hing / asafoetida
1 cup onions, cut in juliennes
2 tsp tamarind
½ cup carrots
1/3 cup French beans
Few cauliflower florets
½ cup green capsicum
1 cup potato + purple yam
1/3 cup fresh peas
1 tsp curry leaves powder
1 cup coconut milk
150g paneer
Method:
1. Take ghee/oil in a pressure cooker and add hing. Sauté the onions till they are translucent. Then add tamarind paste and mix well.
2. Then add the prepared paste and sauté for 4-5 mins. Add a little water if required.
3. Then add all the veggies one by one and mix.
4. Add ½ cup coconut milk and some water and cook in the pressure cooker for 2-3 whistles. Let it cool down naturally.
5. Open the pressure cooker and add water if required. Adjust salt.
6. Now, before serving, heat the curry and add another ½ cup coconut milk. After adding the milk, mix well and switch off the gas.
7. Serve hot with rice or parathas or set dosa.
