The Denver Steak is a relatively new cut of beef, it was born in 2009. It was the result out of a research project called "the Beef Checkoff", developed by meat-science professors at the University of Florida and the University of Nebraska. The goal of the program was to identify and promote new and potentially more affordable cuts of meat... and they were VERY successful at it.
How successful? Well, lets just say the Denver steak is the fourth most tender muscle section of a heifer, steer, or cow.
The Denver comes from the chuck of the steer. In Japanese restaurants it is commonly used for shabu shabu or yakiniku grilling. It was featured in Wall street Journal's 2019 "Grill Stars".
What does it taste like? Rich, buttery smooth flavor. Think of a NY Strip mixed with a short rib. Cooking it is just as easy as cooking a New York Strip.

How to cook a Wagyu Denver Steak with Chimichurri Sauce Step by Step
1- Let steak come to room temperature.
2- Heat up cast iron on high heat
3- Season with salt and pepper
4- Bring down heat to medium high
5- Add oil to cast iron.
6- Place steak in the pan
7- Sear for 2 min on both sides
8- Gently press down for an even sear
9- Let it rest for 5 minutes
10- Slice
11- Serve and dress with Chimichurri (Available on our website!)
