STEAMED PORK WITH CHINESE GRAPEFRUIT SKIN
1/2 Pomelon Chinese grapefruit skin
5 to 8 oz. liced pork belly
2 to 3 tablespoons chopped ginger
To prepare Chinese grapefruit skin:
1 tablespoon salt
3 cups water
1/2 cup dark soy sauce
2 tablespoons ginger
6 star anise
1 tablespoon cumin seeds
5 cloves garlic
2 tablespoons dried Chinese peel
Cut off the top of a pomelo Chinese grapefruit. This is the small end of the pomelo. Cut the pomelo skin into sections, cutting 1/2 inch deep into the grapefruit skin. Peel off the sections of the grapefruit skin. You need the grapefruit skin of 1/2 a pomelo Chinese grapefruit.
Fill a large bowl with cold water and add 1 teaspoon salt. Soak grapefruit skin overnight. Squeeze the water out of the grapefruit skin the next day. Change the water, add a teaspoon of salt soak the grapefruit skin again over night. On the third day, squeeze out the grapefruit skin again. Boil the grapefruit skin for 15 minutes. Put grapefruit skin in cold water and then squeeze out water from grapefruit skin.
In a pan or a wok, put in 3 cups water and bring to a boil. Put in the ginger, star anise, cumin seeds, garlic and dried Chinese orange peel. Boil of 10 to 15 minutes. Let liquids cool off for 15 minutes. Put in grapefruit skins and let soak for a few minutes. Then transfer the grapefruit skins to a bowl and pour in the liquids. Let soak for 12 hours.
Slice the Chinese grapefruit skins into 1 to 1 1/2 inch square. Put ginger and pork belly into a dish. Cover with the sliced Chinese grapefruit skin. Bing some water to a boil in a pan. Put the dish in and cover with a lid. Steam for 30 minutes or until cooked. Check at 15 minutes. Check to see how pork is cooking. Move some of the pork to the surface. Cover with the lid and continue to steam for the last 15 minutes. Serve with hot steamed rice. Enjoy!
