Is five days enough for Nicaragua? Yes, but you need to be careful not to spend all of your time driving around. Granada? Obviously. Ometepe would be great, but that ferry can be over two hours in each direction and that's just to get to the port without even getting onto the island. And of course you have to check out the beach.
