This video describes how I like to smoke salmon bellies, which is a very tasty part of the fish. You will never throw away a salmon belly again after tasting these. Smoky, salty, sweet and savory flavors combine to make delicious salmon candy.
I started with 11 whole salmon bellies and cut them into approximately 1" x 5" strips. I brined them for 24 hours in a commercial brine, although you could easily make your own. The video should tell the rest of the process.
