Fairmont Makati Spectrum Breakfast Buffet
Chocolate is one of the world's most delectable foods that satisfy our desire for something sweet. Its Botanical name, Theobroma cacao, means food for the gods, but ordinary mortals seem to become addicted to chocolate just as quickly.
Good morning fellow Food Trippers! Please join us on this FOOD TRIP and Do Breakfast at Spectrum, Fairmont Hotel Makati.
Breakfast, as the first meal of the day, awakens appetites anew. SPECTRUM's breakfast buffet spread shows a fairly-extensive global collection of morning favorites and comfort meals we crave more of.
The Filipino corner did not come short of serving garlic-fried rice with beef tapa, the hamonado and calumpit longanisa, fried smoked fish (tinapa), pork cracklings with pinakurat vinegar, salted-duck egg, scrambled egg, and sweet & sour pickled vegetables called atchara.
The sweet-chocolatey rice porridge (champorado) is excellently paired with crispy-fried dried squid (pusit) and crispy-fried rabbitfish called danggit.
While the plain rice porridge (lugaw) is perfectly served with a hard-boiled egg and some bits of crispy-fried garlic.
Most of us still cling to the kind of food we were raised on and are likely to climb out of bed early in the morning, insisting on our childhood breakfast favorites.
Today, my memory was refreshed by seeing tin containers of this much-loved treat called TAHO at the buffet table. The word Taho still echoes in my ears, and so does my memory of street vendors peddling this breakfast treat every single day, scooping layers of the silken tofu on my cup with a spoonful or two of tapioca pearls and a personal request for a double measure of the sweet and thick sugar syrup called arnibal.
Another treat on the buffet was the TSOKOLATE de BATIROL. A chocolate beverage served hot in a silver pot with a whisk called molinillo, locally known as batirol. It is made with pure local cacao called tablea, traditionally prepared only with water or milk, but can be sweetened with sugar depending on your preferred sweetness.
I best remember this special drink enriched with peanut butter, thick, rich, and decadent, lovingly prepared by my grandmother, Lola Colyang, on our family's Christmas and New Year's Eve feast. I still find this incredibly-comforting indulgent drink impossible to resist.
More so when paired with the famous salakot hat-shaped, sweet, and moist muffin bread, called Kababayan, and the freshly made sugar doughnuts.
Food on our plates today comes from every corner of the globe. We are on an exciting-food journey when we taste the flavors of food we have never tried before.
In India, a meal consisting of rice, a variety of dal (lentil or bean dishes), various curries, chutneys, pickles, and desserts are presented on a round platter called thali.
At Spectrum, you can complete your thali plate with a healthy Indian meal of Basmati rice, a Dal Makhani, a tomato-based dish of lentils, a chicken sausage, a soft and spongy Idli bread with coconut chutney, a Masala Dosai, a lentil crepe with savory potato filling, a Pita bread, some Hummus, and Pumpkin Moutabal with a side serving of Fattoush Salad.
Eggs are a perfect food. We can enjoy them in innumerable ways at the American station, with sunny-side up, a plain omelet, scrambled eggs, and hard-boiled. They are best enjoyed with crispy bacon, hash browns, sausages, waffles, pancakes, hams, cheeses, and a variety of freshly baked pieces of bread.
Almost always a welcome treat to the Filipino palate at the Asian Station are sushi rolls, plain omelets in teriyaki sauce, stir-fried noodles, Asian mixed vegetables, congee, wanton noodles, steamed mantou, bola-bola, and asado siopao, and Chinese chive dumpling, called chui chai.
Health-conscious diners can experience the freshness of seasonal produce and delicious suggestions for a healthy kick-start to the day at Spectrum's "Well-Being Corner." Choices of Hydroponically grown greens with nuts, seeds, and dried fruits from the Salad Bar, some colorful seasonal fruits at the Fruit Station, freshly squeezed fruit juices, and refreshing fruit smoothies at the Beverage Station, including quinoa, muesli, and granola cereals, with fresh milk, fruit yogurts, and fruit flavored Jello at the Cereals Station.
At Spectrum, all breakfast diners will certainly enjoy all the flavors of global meals, with the rich Tsokolate de Batirol, and some varieties of coffee drinks, both served ground up from the beans to the cup and beyond. This is where your morning moments are turned into happy memories.
