After traveling halfway around the world from Asia to Peru, we were shocked to discover that Chinese food was an integral part of Peruvian cuisine. In fact, it is so ingrained into local culture that many Peruvians were shocked to learn that chaufa wasn't actually invented in Peru!
The origins of Chinese restaurants in Peru (called "CHIFAs") begin in the mid-1800's when Chinese (and other Asian) contract laborers arrived to Peru to work on the plantations, mines and railroads. They brought along their food, but also adapted it to the local palate and ingredients. Today, there are over 6000 chifas in Lima alone, and Chinese food is a favorite all across Peru.
