Shrimp wash
- handful of raw shrimp
- 2 tbsp corn starch
- 1 tsp salt
Shrimp marinade
- 1 tsp white pepper
- 1/2tsp soy sauce
- 1/2 tsp salt
Egg mixture
- 2 eggs
- roughly 200ml of unsalted chicken stock
Finishing sauce
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 scallion
Steam time:
- 3-5 minutes before the shrimp (wrapped)
- 2 minutes after the shrimp (unwrapped)
- 30 seconds - 1 minute on remaining heat after the scallion is on
