Cleaning and skinning trout with a pair of scissors. It's best to clean the trout shortly after catching. The technique is the same for salmon.
I've tried this method for bass, shad, and panfish (brim), but have found that this method works best for trout.
These trout were caught at Boca Reservoir near Truckee, CA on 12/06/08. There were 7 of us that caught the fish. We did a lot of catch and release and kept 15 between us all, that's about 2 fish per person - enough for an awesome meal with some left-overs.
