Hello Friends,

Here is my version of lauki kofta curry recipe and you will not be surprised that i made the healthier version of one of your daily favourite curries :)
Jatin loves Lauki ke kofte and he can have it every week but since I don't prefer fried food at home, I used to make lauki ki kofte very rarely.

But since I started making baked lauki ke kofte, I make this recipe "Lauki Kofta Curry" quite often now. I am happy and so is my husband, Jatin.
I thought that the taste will not be the same and Jatin will not like the baked version of Lauki kofta curry but he couldn't find the difference and he just loved it a lot. Bingo!

You should also give baking a try. It is not that difficult. It is easy and much much healthier and apart from that, you don't need to re-use the same oil again and again. I personally don't like to use the oil in which I fried once. But obviously, we can't throw that away too. So baking instead of frying is a perfect option for me...for my family :)
