Stuffed eggplant ingredients:
5 eggplants
50 grams of rice
50 grams of split peas
150 grams of ground beef
300 cc of water
1 onion
2 tablespoons of tomato paste
30 grams of parsley
30 grams of mint
30 grams of savory
Salt 1 teaspoon
Black pepper 1 teaspoon
Turmeric 1/2 teaspoon

Stuffed eggplant recipe:
Before Soak the rice and split peas in cold water for 30 minutes in a separate bowl.
After 30 minutes, drain the rice and boil it in boiling water for 5 minutes. Then drain.
Drain the split peas and boil them in boiling water for 30 minutes and drain them.
Chop the onion and fry in a pan with a little oil until the onion turns golden. Add 1/2 teaspoon of turmeric and black pepper to the onion and fry a little. Add the ground beef to the onion and fry until the beef is cooked. Meanwhile, chop the parsley, mint, and savory. Add the chopped vegetables to the beef mixture and fry a little.
Add a little oil to the beef mixture and then add rice and split peas and 1/2 teaspoon of salt and fry for 1 minute on low heat. Set aside the stuffed eggplant filling.
To prepare tomato sauce, pour a little oil in a pan, add 1/2 teaspoon of turmeric and fry for 1 minute on medium heat. Then add the tomato paste and fry on medium heat until the tomato paste is fried and does not smell raw. Then add water to it and also add 1/2 teaspoon of salt and increase the heat until the water boils. When it boils, turn off the heat and keep the sauce aside.
According to the video, Cut the heads of the eggplants and empty the inside of the eggplants. Then fill the inside of each eggplant with filling.
Grease the bottom of a suitable pot with a little oil. Put the stuffed eggplants in the pot and put the eggplant heads on them. At the end, pour the tomato sauce into the pot and put it on low heat. Cover the pot and cook for about 1 hour on low heat.
Your stuffed eggplant is ready.
