Got over ripened bananas🍌 and zucchini's? If so, don't throw them away. Instead, make this delicious Zucchini Banana Bread. It is so moist and so satisfying. Every time I bake this, the whole house smells like the holidays.
My recipe calls for a hint of nutmeg and cinnamon. You can also add some ground cloves if you wish. I hope you enjoy this recipe as much as I do. Thank you for watching.
Yields 8-9 slices (9" pan)
Preheat oven to 350F
Ingredients
1 egg
1/2 cup sugar
1/2 cup muscovado brown sugar
1/2 cup oil of choice
2 bananas, mashed
2 tsp vanilla paste or extract
1 1/2 cup flour
1 tsp cinnamon
1/2 teaspoon nutmeg
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 1/4 cup shredded zucchini ( about 1 large zucchini)
Nuts (optional)
Bake for 40-45 minutes, depends on your oven
