Ingredients:
700g Mackerel
8 slices ginger
3.5 liters water
4 Sardine (canned sardine in tomato sauce)
20g Tamarind Paste + 300ml Water (mix well drain and set aside)
1 inch knob Galangal
2 bruised Lemongrass (white part only)
6 rings Pineapple (sliced)
145g Laksa leaves
450g Laksa Noodles
Chilli spice paste:
10 pcs Dried chillies
5 pcs Fresh Red chilli
30g Shallots
1 inch knob Galangal (toasted)
1½ tbsp Belacan (toasted)
1 inch knob Turmeric
6 clove Garlic
Condiments:
1 Cucumber (sliced thinly)
1 Mint leaves
1 red onion (sliced thinly)
2 red chili (sliced thinly)
1 Ginger torch flower (Bunga kantan) (sliced finely)
Prawn paste to personal preference
½ pineapple (sliced into bite size)
2 – 3 Calamansi
